As a gateway to Europe, Asia, Africa and the Middle East, Istanbul has acquired an incredibly rich and diverse food culture. The city served as the capital of the Ottoman Empire for five hundred years, which at its height stretched from Budapest to Baghdad, and Tunis to Tiflis. Able to source a wide array of exotic ingredients, the sultan’s army of chefs spent years perfecting the best of East and West cooking traditions, creating gourmet magic in the imperial kitchens of the Topkapi Palace.

Today, we continue that love affair with food. Sophisticated, yet simple, the Topaz menu is defined by our modern interpretation of classic Ottoman and Mediterranean recipes. Lamb and fish form the staple part of our culinary adventures, along with an abundance of vegetables and divine desserts that suit every palate.

Executive Chef

Our head chef Tevfik Alparslan loves to innovate, marrying traditional Ottoman cuisine with contemporary flavours and techniques to serve up culinary delights from the Topaz kitchen.



Guest Chefs

During 2007, 2008 and 2011 we invited international chefs to guest in our kitchen. The legacies of Stefano Marconi (Italy), Laura Sanchez Sevillano (Spain), Christoforos Peskias (Greece) and İsmail Yılmaz (France) live on in Topaz’s Mediterranean menu.
